Potato Salad
Ingredients
5-6 baby potatoes chopped
3 cups mayonnaise
5 hard-cooked eggs, chopped
1/2 cup chopped onion
1/2 cup chopped celery
1 tablespoons mustard seeds Powder
1/2 teaspoon whole cumin seeds Powder
1/2 onion - roughly chopped
1/2 teaspoon turmeric
5 spring onions - thinly sliced
1 green chilli - finely chopped
Juice of one lemon (optional)
tablespoon apple cider vinegar
1 teaspoon salt, or according to taste
1/2 teaspoon ground black pepper
Fresh coriander to garnish
How to Prepare
Place potatoes into a large pot and cover with salted water; bring to a boil.Reduce heat to medium-low and simmer until tender, about 10 minutes. Drain. Return potatoes to empty pot to dry while you mix the dressing. Sprinkle with salt.Stir mayonnaise,hard-cooked eggs, red onion, celery, mustard powder,cumin powder,lemon, cider vinegar, 1 teaspoon salt, and pepper together in a large bowl. Add potatoes into the mayonnaise mixture. Allow to chill at least six hours, or overnight, garnish with coriander before serving.
